Kreuzberg local document extraction tool renamed to Xberg

The author of the Kreuzberg local document extraction library is renaming the project to Xberg to improve accessibility for non-German speakers. The new repository is, while an LTS version will continue to receive bug fixes and security updates from a separate repo until the end of the year.

• The name change addresses pronunciation and understanding issues for users without German context.
• An LTS version is published with no new feature work.
• Xberg v1.0.0 is currently in RC, with pre-releases available on PyPI under the name xberg.
